Raspberry Blanc-Manger

Easter dessert:

It wasn’t melting really…  I just got a little carried away dunking the sides in a sinkful of warm water when trying to unmold it.

We ate this with some whipped cream on top.  It was light and fluffy and allowed us to fool ourselves into thinking spring might really be here.

While enjoying this, I thought it might be brilliant to use for a layered summer dessert.  I’m thinking a layer of light cake (Dorie suggests Perfect Party Cake), then the Raspberry Blanc-Manger, then a layer of Cream Cheese whipped with Whipped Cream and Powdered Sugar, then topping it off with a layer of berries.  Yum Yum Yum!
