How to: Gravy and Broth

How to: Gravy:

  • 1 C cool Water
  • 1 tbs Cornstarch
  • 1 C dripping/juice
  1. Pour 1 C cool water into a sauce pan.
  2. Mix 1 tbs cornstarch in with the water.
  3. Add 1 C drippings/juice from bottom of roasting pan to sauce pan.
  4. Heat over medium high heat, whisking constantly until thick (about 10 minutes).
  5. Salt and pepper to taste

How to: Broth:

  • 1 4-6 lb Chicken Carcass
  • Veggie scraps
  • Water
  1. Place carcass and scraps in a 5 qt pot.
  2. Fill pot with water.
  3. Boil for 3 – 3 1/2 hours.

I freeze my broth and then take it out to defrost overnight when I need it.
