Comfort Food That Won't Make You Fat

Soup is amazing. It’s comfort food with all the good stuff and a lot less of the bad stuff. You can feel good and look good. It isn’t a quick meal but it is an easy meal, and a tasty meal! Perfect for a nice fall day.

Chicken and Bow Tie Soup:
Serves: 4-6
3 pieces chicken, bone in, skin on
2 rather large potatoes, cubed, skin on
3 large carrots, chopped
3 celery stalks, chopped
2 small onions, cut into quarters
4-5 cloves garlic, chopped
2 C bow tie pasta

1. In a medium sized pot, boil chicken about 1 1/2 hours, until done. Drain broth (to keep) and remove chicken. Set chicken aside to cool. Return broth to pot and add water if necessary. Put broth back over heat to boil. Add garlic.
2. While broth is coming to a boil, shred chicken into small pieces and add to broth. Discard bones and skin. (This step really grosses me out!)
Add veggies. Salt and Pepper.
3. When veggies just begin to become tender, add pasta. Soup is done when pasta has reached the tenderness of your liking. S&P each serving to individual taste.

*I think this could easily be made a veggie soup for those that do not eat chicken. Just skip the chicken part and use a veggie broth (store bought or homemade), rather than the chicken broth. Maybe even toss in some tofu. Yum!
