Clean Out Yo' Fridge Pasta

This recipe is very flexible. In fact, it’s so flexible I’m not sure it’s really a recipe. It’s more like guidelines for a tasty pasta dish. Just clean out your fridge and throw in any veggie you want! The only veggies I feel are absolutely neccessary are the tomatoes, garlic, and onion.

Chicken and Veggie Pasta:
Serves: 2
2 boneless skinless chicken breasts, cut into chunks
1/4 C evoo
1/8 C balsamic vinegar
2 large cloves garlic, chopped
2 tbs fresh ginger, cut into small pieces
1 small head of broccoli, cut
1 small onion, chopped
1 small summer squash, thinly sliced
1 fresh tomato, cut into chunks

freshly ground pepper
grated Parmesan cheese
Pasta of your choice, cooked

1. Heat balsamic and oil in pan. Saute ginger, garlic, onion, broccoli, and squash (or any other veggies, except the tomatoes).
2. Add chicken and cover pan. When chicken is cooked add tomatoes and cook just until heated.
3. Pour chicken and veggie mixture over pasta of your choice. I’ve used spaghetti, fettuccine, and whole wheat cous cous. All were good. Top with fresh ground black pepper and grated Parmesan.
This pasta is very good with a chunk of homemade whole wheat bread!
*Also very good sans chicken!*
